Ingredients:
- ¾ cups unbleached all-purpose flour
- ¼ cup maple syrup (an alternative option: coconut sugar)
- ¼ tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- ¾ cups lemon or lime juice (or any citrus juice of your choice)
- ⅓ cup avocado oil (or any healthy vegetable oil)
- 1 tsp vanilla extract
- 1 tsp cinnamon (ceylon) powder
- 1 tsp clove powder
Instructions:
- Preheat your waffle iron according to its instructions.
- In a medium bowl, whisk together the flour, baking powder, and salt until well combined.
- In another bowl, whisk together the lemon juice, maple syrup, avocado oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until combined. Be careful not to overmix; a few lumps are okay.
- Lightly grease the waffle iron with oil or cooking spray if you need to. (we do not grease the iron).
- Pour enough batter onto the preheated waffle iron to cover the grids (this amount will vary depending on your waffle iron, ours took two spoons).
- Close the iron, and wait until the waffle is golden brown and crisp (check the sides as they fluff to see the color change).
- Serve immediately with your favorite toppings such as fresh fruit, maple syrup, or dairy-free yogurt.
Tips:
Check the sides of the waffles as they cook. Look for the waffles to fluff up and become dry. Also, look for a golden change color. The change of wet batter to dry and golden color indicates that the waffles are done. For best results try this tip!
